About 4 years ago, I worked for a French owned company. One of the founders adored macarons and we would bring some in for his birthday, every year. It was always a special time that we all looked forward to, eating those dainty little sandwiches - two cookie pillows that sandwiched a sweet ganache filling. I enjoyed visiting the store in Hayes Valley where they would have over seventeen different flavors (passionfruit, hazelnut, coffee, chocolate, pistachio...just to name a few). Suffice to say, I’ve tried my fair share of macarons over the years but my all-time favorite is the coconut macaron. There is something so sweet yet earthy about the coconut flavor that really enhances this delicious treat. One day, curiosity got the best of me and I researched how this dessert came to be. It has an interesting history that dates all the way back to 16th century France where the recipe was created as an alternative to the almond paste version in Italy. Today, it’s just a lovely finger sandwich cookie that can be enjoyed any time of day. I typically enjoy them with tea, of course.
